Gingerbread Muffins

Nothing like the rich smell of gingerbread baking to gather folks for the holidays. These delicious muffins are flavorful, moist and welcoming.

Preheat oven to 325°F. Line muffin pan with baking cups. In large bowl, combine flour, sugar, baking powder, cinnamon, ginger, cloves and salt. In separate bowl, beat eggs with milk and vanilla; stir in melted butter. Add all at once to flour mixture; stir just until moistened. Spoon into prepared pan.

Bake 15-18 minutes or until muffin springs back when lightly touched. Cool completely on rack. Sprinkle, if desired, with cocoa powder, cinnamon and confectioners´ sugar. Cool and place in lined basket to serve.

Makes 12 Muffins.
