Most cracking with sheet cakes occurs because the cake isn't properly supported. Since a large cake can be heavy, a single cake board can bend, so it's best to double or triple the boards, securing them together with tape, then covering them with Fanci-Foil. Also, make sure to remove the crown of the cake to make the surface perfectly even, before placing it on the cake board. That will assure that the cake is supported evenly on the board. If you are having problems transferring a sheet cake from one location to another, slide a cake board underneath it to support the weight of the entire cake layer.
