Hi Nancy: Why in some recipes for 12 or 14 inch cakes it's specified to bake at 325 degrees.

The lower oven temperature for slightly larger pans allows the heat to spread and bake the middle of the cake layer before the outside edges of the layer overbake or burn.

For larger cake layers, a Heating Core filled with cake batter and placed in the center of the baking pan while baking will conduct the heat evenly through the baking cake layer.
