To torte a cake means to cut it into multiple layers. This is often done to add height to a cake, since you add icing, fruit and other fillers between the layers of the cake. If using a knife, place the cake on your cake circle on a turntable. While slowly rotating the turntable, move the knife back and forth through the cake to create 2-3 layers from one. If you’re using a cake leveler, start with your cake on a cardboard cake circle. Measure the height you want to cut the layers, adjust the cutting edge of the leveler, then cut into the cake, using an easy sliding motion.
