How do I roll up jelly rolls without them tearing apart? Do they need to cool completely or still be warm?

Inorder for your cake to not crack it has to be warm when you roll it. After the cake is removed from the oven invert it on a cooling grid and remove any parchement. Flip the cake back over and, starting from the long edge, roll you cake in a clean kitchen towel. Place the seem side down and let the cake cool completely. Hopefully this will help with any cracking.
