Nancy, what is glucose and glycerin, and what are they used them for?

Glucose is a sugar syrup, most often a corn syrup product, that is an essential ingredient for making fondant, gum paste and some candies from scratch. Glycerin is often used as a solvent, other ingredients dissolve into glycerin easier than they do water or alcohol. In cake decorating, it is used to restore the consistency to dried icing colors and in rolled fondant icing.
