Yes, rolled fondant should not be used on ice cream cakes, because fondant should not be frozen. Very moist cakes are generally not strong enough to support the weight of the rolled fondant icing. Also, very moist fillings have a tendency to seep out into the rolled fondant, which can become soggy and fall off the cake. Though some people do place their fondant-covered cakes in the refrigerator for short periods of time, we do not recommend doing so.
