Some brands of butter and margarine are yellower than others, so that can cause a problem when trying to make pure white buttercream icing. Like you, I love the flavor of butter in my icing. If you’re unable to find a pale yellow butter, there are two other solutions to brightening up your icing. You can make an all-vegetable shortening icing and add butter flavoring, or you can make your favorite recipe, and add White-White color from Wilton to the icing.
