Why does my fondant sweat? It looks like it has water bubbles.

Fondant should always be kept at room temperature, never placed in the refrigerator or frozen. It should also be applied to room temperature (not chilled or still hot/warm from the oven) cake. If the cake is not room temperature, condensation can form, and moisture will soften/ melt fondant.
