We do not recommend freezing cakes covered with fondant. These cakes will keep, with the fondant on it, at room temperature, for 3-4 days. If you need to make your cakes earlier than that before a special event, bake up the layers, fill and stack and add your buttercream or apricot preserve coating. Then wrap airtight and freeze. Be sure to defrost the cake completely, and bring to room temperature before covering with fondant and decorating.
