You can use a purchased egg separator, which has a little cup for the egg yolk to sit in, and slats to allow the white to fall away. But another option is to use your fngers. Break the egg into your hand, keep the yolk on your fingers, and strain the white off between your fingers. While the most commonly used method is to break the eggshell in half and transfer the yolk from one half to the other while releasing the egg white, it can be the most difficult, as often the egg yolk will break as it passes across the rigid, sometimes sharp egg shell.
