Fondant flowers and other decorations should be dried at room temperature, primarily because fondant should not be refrigerated. Set your flowers on a cornstarch-dusted surface (cake board, flower former, etc.) to dry. Depending on how large and the style of the flower you are making, drying can be as short as several hours, or as long as several days – so plan accordingly! If your decorations are very large or thick, you might want to knead small amounts of Gum-Tex into the fondant, which will help with the drying process.
