The buttercream icing recipe on this website is medium consistency icing – perfect for stars, shells and many other decorations. For icing cakes, we recommend thin consistency icing. Simply stir in additional liquid. Our recipe uses milk, but you can also use water or light corn syrup. Leaves and stringwork are also made with thin consistency icing; for these, we recommend adding the corn syrup, which adds elasticity to the icing. If you need stiff icing (for roses), stir in additional sifted confectioners’ sugar.
