Do I have to spray a pan before I bake in it?

Most recipes call for greasing the pan before baking in it. To do this, you can either spray the pan with vegetable pan spray, brushing on Cake Release or spreading a thin layer of solid vegetable shortening onto the pan. It’s best not to use butter or margarine, as these burn much more quickly than the spray or shortening.
