I buy fondant ready made at the craft store because it saves me a lot of time when decorating. When you're making figures and modeling fondant, nothing is better than practice. When you have spare time, take out a chunk of fondant and start molding it and playing with it until it looks how you want it. This will help you get a feel for the scale of things (for example, how large a head should be in proportion to a body). The proportions of things can get tricky, especially facial features, but I find the more modeling I do, the better I get at it. Good luck!
