Self-rising flour is flour that has leavening and salt added to it. If the cookie recipe you are making includes leavening (baking powder or baking soda), and not all cookie recipes do, you can try using the self-rising flour – just eliminate the leavening and the salt called for in your recipe. You may find that your cookies rise too high or that they rise and then fall flat.
Some self-rising flour has lower protein content, so you might also find that the cookies are paler in color, softer, puffier and more crumbly. Depending on your tastes, you may or may not prefer the result.
