Hi Nancy! I love the lemon cake recipe you have but would like a substitute for the four sticks of butter. Can I use oil?

Stick margarine (at least 70% fat) or solid vegetable shortening could be substituted for the butter. While the cake will have a similar, though not the exact texture as a cake made with butter, it won’t have the rich flavor that butter imparts.

Liquid oil should not be substituted for butter, margarine or shortening, as it will completely change the texture of the cake.
