Rolled Fondant and Gum Paste each have properties which make them best for certain types of decorating. Of the two, rolled fondant is the only one that can be used to cover cakes; it stays soft when applied over buttercream. Rolled Fondant is also used for making cut-outs, appliqués, etc., but does not dry as hard as gum paste.
Gum Paste is used for most flowers, especially those that require a lot of ruffling. It is also used in other decorating applications when you want the decorations very thin.
