Ask Nancy
My mom always made homemade candy using fondant, and I am now making it. I cook the mixture to soft ball stage, then let it cool a little before beating it until it turns white. Is the fondant for cakes and candy different?

Yes, the two products are different. Fondant for filling candies is a sugar candy mixture which is sometimes flavored. Rolled fondant for covering cakes has gums and starch added; these additions give the fondant strength and stretchability that allow it to mold around the cake you are covering.
