Cheesecake is not meant to be removed from the springform pan – its served from the bottom of the pan. If, however, you are selling cheesecakes – or giving them as a gift and are afraid you might not have the bottom of the pan returned – some bakers take cake circles the same size as the springform pan, cover them with aluminum foil, then place the covered circle into the pan. Then, follow recipe instructions for placing the cheesecake crust, etc.
