How can I get a nice smooth icing finish on my cakes before decorating them?

Cordieann - from Bossier City, LA

Wilton has created some excellent tools to help you create a smooth and even icing finish: The Wilton Icer Tip and Spatula. The Wilton icer tip will help you squeeze the icing on the cake smooth and efficiently. Then you can go over the icing with the spatula to smooth out the lines. Also dipping your spatula in hot water, wiping it dry and then going over your icing will smooth the lines. Another option is to ice your cake as previously described, wait for the icing to slightly crust and then go over it with parchment paper, patting out the lines. This will help smooth any unwanted lines and the icing won’t stick to the paper because it will be dry.
