Make sure you only beat the batter as the preparation directions on the package tell you – beating incorporates air, causing the air pockets/bubbles you see in your batter. In addition, we always recommending tapping your filled cake pans on the counter just before you put them in the oven – this causes the air bubbles to rise to the top. Some will break before placing in the oven, others will break shortly after.
