If you are decorating the cupcakes with buttercream icing, you can freeze them either with or without the icing on them. Make sure that you wrap the cupcakes so they are airtight before freezing – that will assure that they don’t pick up odors from the freezer. When defrosting, whether with or without icing, keep the cupcakes covered so that any condensation will form on the wrapping, not the cupcake! If you are freezing without icing, make sure the cupcakes are completely thawed and at room temperature before you ice them.
