1. Hello! Can cream cheese frosting filled cakes covered in fondant sit at room temp? If so, for how long? Can you give us examples of fillings that are considered “perishable” and examples of fillings that, when the cake’s covered in fondant, can sit out at room temp? Many thanks! Even though these cakes are covered in fondant, they should not sit out for more than two hours because the cream cheese needs to be refrigerated. Some nonperishable fillings are jams and jellies, icings made with little or no butter, and chocolate hazelnut spread. Fresh fruit, fruit curds, whipped cream, mousses and custards all require refrigeration.
