After icing a cake, must I place the cake in the refrigerator or can I leave it out over night?

It depends on what kind of cake you are baking and what kind of icing you are using. For example, if you have baked a cake with cream filling or have made a homemade icing like stabilized whipped cream or cream cheese, the cake must be refrigerated. Most cakes however, can sit out at room temperature for 2-3 days. For example, traditional buttercream iced cakes.
